Airport taxi fixed cost is Rp199,000, a bit over US$20 I think. It might be another 3 hour trip and you will arrive well aftyer dark. Maybe you should consider 1 night first in the vicinity of the airport? Drivers of taxis or hire vehicles will not be too enthusiastic about taking you as they will have to drive back again afterwards and it would be a long day for them probably.
In Candi Dasa it will be eay to get a driver from the street to take you touring and to Ubud at the end of your stay. You're not likely to get a taxi so you need to settle on a price before you get in. An 8 hour day should be no more than Rp250,000.
If you go to Lovina take the direct road up and then come back via Serirrit (west along the coast from Lovina) and up through the mountain via Munduk Falls, the coffee house at the top of the hills and Lakes Buyan and Tamblingan. Stop at the market in Bedugul for fruit and nuts at least.
Seminyak is an eating/nightlife district in my mind, then working towards the airport; Legian is the shopping district and Kuta is a madhouse, Tuban is a quieter combination of the others. Take your pick, depending on what you want.
Have not eaten in Mozaic (but love Lamak in Ubud) but I'm sure that you would find establishments in Kerobokan (district next to Seminyak) that would be at least comparable, and a lot closer to wherever you are staying.
You're right, all of these districts are within a 20 minute taxi ride of each other, unless you strike a cremation or temple ceremony.
If you want to visit a school I would suggest that you ask the desk staff at whichever hotel you're in to make a nearby contact and arrange a time for you. These desk people should be helpful for any other local advice you need also.
