I have only been once, five years ago, and am going again in March. Just a couple of hints for you.
1. As mentioned only drink bottled water (use to brush teeth too)
2. Go to Mataharis in Kuta and get an idea of what prices are before
venturing out to the streets to start batering.
3. Never say you are a new comer to Bali
4. Never tell them maybe tomorrow you buy they WILL remember tomorrow
5. Try and use either the bank or the Kodak shops to change your
money. BUT ALWAYS CHECK IT BEFORE WALKING AWAY. Take a small
calculator
6. Places of interest: Bird Park & Reptile Park (next to each other)
Kintamani Volcano
Celuk (gold and silversmiths)
Must see a Barong Dance
Wood Carvers
Batik Fabric makers
7. Bingtang Beer MMMMM
8. Try a variety of restaurants to sample all the cuisines offered
9. Try the cocktails MMMM
10. Most importanly ENJOY YOURSELF and the culture of the BALI PEOPLE

You can organise a day trip which covers most of the tours above. Just can negotiate with a local driver (many suggested on this site) or through your hotel. Hope this gives you a little help. Read through the archives as their ae many suggestions for your trip, But most importantly I hope you enjoy your stay in Bali.
